Quaker’s Vanishing Oatmeal Cookie Recipe


I found this recipe on the back of the Quaker Old Fashioned Oats box and found and printed the recipe online:

I did a little adjusting time wise to fit our oven’s needs: I baked them for 14 minutes (!) instead of 8-10 minutes

Quaker Oats

INGREDIENTS:

    • 1/2 Cup(s) (1 stick) plus 6 tablespoons butter, softened
    • 3/4 Cup(s) firmly packed brown sugar
    • 1/2 Cup(s) granulated sugar
    • 2 Eggs
    • 1 Teaspoon(s) vanilla
    • 1-1/2 Cup(s) all-purpose flour
    • 1 Teaspoon(s) Baking Soda
    • 1 Teaspoon(s) ground cinnamon
    • 1/2 Teaspoon(s) salt (optional)
    • 3 Cup(s) Quaker¬ģ Oats (quick or old fashioned, uncooked)
    • 1 Cup(s) raisins
    • PREPARATION:

      Heat oven to 350¬įF. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Apple Bars


Remember how I said I made apple bars yesterday?

I just ate the last piece and didn’t have time to take pictures (haha) with my siblings. They were SOOOOO GOOD!

Probably the best thing I baked for a while. Wow. Those were amazing. I changed (and doubled) the recipe, for a family of 6, including 4 hungry kids (one is me!), we need more!

So here it is. Remember I said the recipe was from www.cookingoncloverlane.blogspot.com¬†and the whole link I found on the recipe said www.cookingoncloverlane.blogspot.com/2011/10/apple-bars.html. Please take time to check out that recipe, or use mine which is a little different from Clover Lane’s. Pretty much the same though. Thank you Cooking on Clover Lane!

2 cups flour (I used all purpose)

2 1/4 tsp baking powder

Dash of salt (to be exact, 1/2 tsp)

Generous shake of cinnamon (ground, 1/2 a tsp, I probably used 3/4 to a whole tsp. I made these into sort of a ‘apple cinnamon bar’)

1/2 cup of melted butter

1 cup brown sugar (to tell the truth, I only had about 1/2 cup of this, so I filled the rest up w/ white sugar. Tasted great!)

1 cup white sugar

2 eggs

2 tsp vanilla (I did about 1 1/2 tsp)

2 cups chopped apple (I used 2 Costco sized {haha} apples. They were from Costco)

What to do:

Preheat your 350 degree oven, grease a large casserole (oven safe) dish, or, 9X9 if you want it to be really thick, bc that is the size it called for just normal, not doubled. The original recipe mixes stuff differently than I do. This is what I do:

Mix your melted butter, brown and white sugar until it is all mixed, and the same consistency. Add your eggs and vanilla, make sure your eggs are all combined. Add your flour, baking powder, salt and cinnamon and then add your chopped apples. The smaller pieces the more apple in every bite! Put this in the pan, and make your topping! (below)

Make your topping:

Before you put this in the oven, mix together 2 tbsp of sugar (white) and 2 1/4 tsp of cinnamon. Sprinkle evenly on top, and stick in the oven for 35-40 minutes! Enjoy, and I recommend eating these treats warm!

2 1/3 cup warm water

1/4 c honey

4 tbsp butter (melted)

1 1/2 tbsp yeast

2 1/2 tsp salt

3 c whole wheat flour

2 3/4 c all purpose flour

Mix 1 c whole wheat flour, 1 c white flour, yeast, and salt in the mixer.

Add warm water, honey, and butter (melted).

Mix in remaining wheat flour, and add enough white flour so your bread is kneadable and non-sticky!!

Next, get your hands ready to be sore!! Knead this sucker for 5 minutes!

Sounds easier than it looks.

Put the dough back in your mixing bowl, cover with damp dishcloth, and set in a warm place for 45 min.

Punch the dough and divide it in 1/2, and and roll each 1/2 into a rectangular shape. Roll each loaf up and place into a 9√ó5 bread pan (loaf pan).

Cover the loaves with damp dishcloth and let it rise for 30 min.

Bake in 350 degree F oven and bake for approx. 30  min (we do 37), it just depends on the oven.DSC02909
